Shrimp & Rice - Pressure Cooker

lb cooked, shelled shrimp (defrost if frozen)
of a lemon (juice & grated zest)
1 small garlic clove, finely chopped
3 cups cooked rice

Mix the shrimp, lemon juice, zest, and the garlic. Put in the refrigerator for about an hour.

Cook rice per instructions below and add the shrimp mixture to the cooked rice. Place in NESCO® 6 Qt. 3-in-1 Digital Electric Pressure Cooker cooking pot so the mixture is heated through.

Pressure Cooked Long Grain Rice
1 cup long grain rice
2 cups of water

Place both the water and rice in the bottom of the cooking pot. Lock lid into place. Set the Pressure Regulator knob on the Pressure setting. Set unit for 5 minutes on High Pressure Mode. It may take up to 8 minutes to get up to pressure before the timer counts down.

Steam Cooked Long Grain Rice
1 cup long grain rice
3½ cups water, separated
1/2 tsp salt
1 Tbsp butter, cut into bits

Place 2 cups of water in the bottom of the cooking pot. Combine the rice, the additional 1½ cups of water, butter and salt in a heat-proof container no more than 7½" in diameter.

Place container onto the rack. Lock lid into place. Set the Pressure Regulator knob on the Steam setting. Set the steam button setting timer for 20 minutes and press start.
