Fruity Margarita Mousse - Blender
16 oz strawberries
14 oz sweetened condensed milk
8 drops red food coloring
12 oz frozen whipped topping, thawed
light corn syrup and red decorating sugar crystals (optional)
additional whipped topping, strawberries and lime slices (optional)
From limes, grate 2 tsp zest and squeeze 1/4 cup juice.
Place in mixing cup of Nesco® Grip and Go Hand Blender , puree strawberries with zest and juice until smooth.
Transfer mixture to medium bowl.
Whisk in condensed milk and red food coloring until blended. With rubber spatula, fold in topping. Chill until set, at least 2 hours or up to 1 day ahead.
To serve, if desired, coat small plate with corn syrup. Spread sugar on another small plate. Dip each of 8 margarita glass rims into corn syrup, then into sugar to coat.
Carefully spoon mousse into glasses using about 1/2 cup mousse for each. Garnish with additional topping, strawberries and lime slices, if desired.
