Turkey Cutlets with Mushroom Polinaise - Jet Stream Oven

Mushroom Polinaise:
3 to 4 Tbsp chicken broth
2/3 cup light sour cream
1 Tbsp corn oil
pepper to taste
2 cups mushrooms, sliced

1 lb turkey breast slices; pounded to 1/4" thick
1 Tbsp corn oil
salt and pepper to taste
dried seasoned bread crumbs

To prepare Mushroom Polinaise, combine broth, sour cream, oil and pepper in small bowl. Gently stir in mushrooms. Divide mixture into 2 foil pockets; flatten slightly and set aside.

Brush turkey slices with oil, season with salt and pepper and coat with bread crumbs.

Place foil pockets in center of rack in preheated Nesco® American Harvest Jet Stream Oven and surround with turkey slices. Cook at 400º F on HIGH fan speed for 8-11 minutes.

To serve, place turkey on serving dish. Open pockets and pour Mushroom Polinaise over turkey.
