Shrimp Fettuccine with Garlic - Jet Stream Oven
1 pound fresh fettuccine
1½ pounds large shrimp, peeled and deveined
1 tsp lemon juice
2 tsp olive oil, divided
2 Tbsp garlic, minced
1/4 cup red bell pepper, minced
1/4 cup parsley, chopped
4 Tbsp Parmesan Cheese, grated
In large pot over high heat, cook fettuccine in boiling water for 3 minutes. Drain and refresh under cold water.
In liner pan of NESCO®/American Harvest® Jet Stream Oven®, stir-fry shrimp and garlic in 1 tsp oil for 3 minutes at 400º F with fan on HIGH for 6 to 7 minutes.
Add remaining ingredients except Parmesan Cheese and continue cooking for 3 to 4 minutes.
Add fettuccine for last minute of cooking to reheat thoroughly.
To serve, sprinkle each serving with one tablespoon Parmesan and reg; cheese.
