Chicken Fajitas - Jet Stream Oven

2 whole boneless, skinless chicken breasts
8 eight-inch tortillas

Marinade:
1/2 cup fresh lime juice
2 - 4 Tbsp minced jalapeno peppers
2 large cloves garlic, minced
2 tsp oil
1/2 tsp each - red and black pepper
dash to 1 tsp hot sauce

Sauce:
1/3 cup light sour cream
3 Tbsp salsa, mild or hot

Condiments:
1 medium tomato, coarsely chopped
1 medium green pepper, coarsely chopped
1 small onion, chopped
1/2 cup cilantro leaves, chopped

Place whole chicken breasts in marinade ingredients in zip-lock bag and marinate for 3 to 24 hours.

Wrap tortillas in foil, place on rack, cover with hold-down rack and heat in Nesco®/American Harvest® Jet Stream Oven® at 350º F on LOW fan speed for 4-5 minutes.
Remove from Jet Stream Oven and keep warm.

Drain chicken breasts, blot off excess marinade and slice. Place slices on rack and lay hold-down rack directly over slices. Grill in preheated Jet Stream Oven® at 400ºF on HIGH fan speed for 6-7 minutes.

To serve: combine sour cream and salsa. Fill tortillas with meat, sour cream, salsa mixture and condiments. Roll up.
