Mexican Bread Pudding - Jet Stream Oven
1½ cups apple juice
3/4 cup packed brown sugar
1 tsp cinnamon
2 Tbsp margarine or butter
1 large apple, peeled, cored and chopped
1/2 cup raisins
1/2 cup slivered almonds
6 slices toast, cut into 1" pieces
Assemble Nesco®/American Harvest® Jet Stream Oven® with one expander ring.
Combine apple juice, brown sugar and cinnamon in saucepan; bring to boil and cook for 3 minutes. Stir in margarine. Mix together apple, cheese, raisins and almonds. Place half of toast pieces in bottom of 8 x 8 x 2" dish; top with half of apple mixture. Repeat layers. Pour syrup over all.
Place on inverted rack and bake in Jet Stream Oven® at 325º F on LOW fan speed for 15-20 minutes or until pudding is set in center.
