Spicy Crabmeat Tacos - Jet Stream Oven

1/2 cup red onion, minced
2 tsp safflower oil
1 tsp garlic, minced
2 cups tomatoes, diced
1/4 cup cilantro, minced
4 cups cooked crab meat, shredded
12 corn or flour tortillas
1/4 cup lemon juice
1/2 cup green bell pepper, chopped
1/2 cup cucumber, peeled and chopped
2 cups lettuce, shredded

In large frying pan over medium-high heat, saute onion in oil until soft, about 3 minutes. Add garlic, tomatoes, cilantro and crab meat. Cook for 5 minutes. Wrap tortillas in aluminum foil, heat.

In bowl, mix together lemon juice, bell pepper, cucumber and lettuce. Divide lettuce mixture among tortillas, then top with crab mixture. Serve immediately.

In Nesco®/American Harvest® Jet Stream Oven®, place foil-wrapped tortillas on rack and heat at 400ºF on LOW fan speed for 3-5 minutes. Remove from oven and keep warm.
