Hot and Spicy Chicken Stir-Fry - Jet Stream Oven

1 tsp safflower oil
1/3 cup green onion, sliced
1/3 cup red bell pepper, sliced
1/2 cup carrots, sliced
1/2 cup broccoli florets
1/4 cup chicken broth
2 cups cooked chicken breast, skinless, shredded
1 tsp dark sesame oil (optional)
2 tsp garlic, minced
2 tsp peanut butter
1 tsp rice vinegar
2 Tbsp soy sauce
1 tsp honey
1/4 tsp cayenne pepper
2 tsp fresh ginger, grated

Preheat NESCO®/American Harvest® Jet Stream Oven® for 2 minutes at 400º F with HIGH fan speed.

Place safflower oil, onion, pepper, carrots and broccoli in liner pan (NO RACK REQUIRED). Toss and stir-fry 2 minutes.

Combine remaining ingredients and add to liner pan. Continue stir-frying at 400º F for another 6 to 8 minutes on high fan speed.

To serve, spoon hot stir-fry mixture over boiled rice noodles or Linguine noodles.
