Duckling L'Orange - Jet Stream Oven

1 5 lb duckling
1/2 small onion
1/2 small apple
1 tsp dried rosemary
salt and pepper to taste

1/2 cup orange juice
1/3 cup packed brown sugar
2 tsp grated orange peel
dash of salt
1 Tbsp orange juice
2 tsp cornstarch

Assemble the Nesco®/American Harvest® Jet Stream Oven® with one Expander Ring.™ Place onion and apple in duck cavity; sprinkle with rosemary, salt and pepper. Place duck, breast side down, on inverted rack that has been wiped with cooking oil in Jet Stream Oven®. Cook at 350ºF on HIGH fan speed for 30 minutes.

Turn duck breast side up and continue cooking for 30-40 minutes on LOW fan speed. Prepare sauce by blending together 1/2 cup orange juice, brown sugar, orange peel and salt in saucepan. Mix together cornstarch and 1 Tbsp orange juice; stir into sauce mixture. Cook until mixture is thickened and clear, stirring constantly.

Remove onion and apple from duck cavity, carve and serve with sauce.

Yields 4 servings
