Chocolate & Orange Shortbread - Jet Stream Oven
1 cup margarine
1/2 cup sugar
2 tsp grated orange peel
2½ cups all-purpose flour
1/2 cup semi-sweet chocolate chips
2 tsp shortening (NOT butter, margarine or oil)
Cream margarine, sugar and orange peel until fluffy, stir in flour until blended. Chill dough for 1 hour.
Divide dough into 3 parts and form each into a ball. Flatten to 5" circles and cut each into 12 wedges.
Place 18 of them in your Nesco®/American Harvest® Jet Stream Oven® on inverted foil-covered rack or cookie/pizza pan. Bake at 300ºF on LOW fan speed for 10-12 minutes or until light golden brown.
Remove and cool. Repeat with second batch.
Melt chocolate chips and shortening in double boiler; stir until smooth. Spread chocolate over cooled shortbread; allow to set.
Store in covered container.
