Strawberry Shortcakes - 12 or 18Qt. Roaster
2 cups all-purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/4 cup sugar
1/2 cup margarine, chilled, cut into pieces
2/3 cup plus 1 Tbsp milk
1 tsp lemon juice
1 tsp vanilla extract
whipped cream to serve
strawberries to serve
Preheat Nesco® Roaster Oven to 425º F.
Combine flour, baking powder, salt and sugar. Cut in margarine until mixture crumbles. Stir in milk, lemon juice and vanilla just until moistened. Drop dough from a large spoon onto lightly greased baking sheet. Place baking sheet on rack. Set rack in preheated cookwell.
Cover; bake 20 to 25 minutes or until lightly browned. Remove from baking sheet to cooling rack. Let cool; then slice to serve with whipped cream and strawberries.
