Swedish Meatballs - 5 or 6Qt. Roaster

4 eggs
1 cup milk
8 slices white bread crumbs
2 pounds ground beef
1/4 cup onion, finely chopped
4 tsp baking powder
2 tsp salt
1 tsp pepper
2 10oz cans cream of chicken soup
2 10oz cans cream of mushroom soup
1 12oz can evaporated milk
Fresh parsley, minced

In a large bowl, beat eggs and milk. Add bread. Mix gently and let stand 5 minutes. Add beef, onion, baking powder, salt and pepper. Mix well. Shape into 1" balls. In a large skillet, brown meatballs. Place in Nesco® Roaster Oven.

In a bowl, mix soup and evaporated milk until smooth. Pour over meatballs.

Cook covered, at 350º F for 45 to 60 minutes. Sprinkle with parsley.
