Cajun Red Beans & Rice - 4, 5 or 6Qt. Roaster

1 pound dry red kidney beans
4 cups water
1 tsp cayenne pepper
3/8 tsp garlic powder
1/2 tsp onion powder
1/4 tsp marjoram
1/2 tsp paprika
4 tsp chili powder
1/4 tsp oregano
1/4 tsp salt
1/2 tsp pepper
1½ tsp cajun seasoning

Combine above ingredients in bowl or pan. Marinate for 8 hours.

3 cups water
2 Tbsp Tabasco® Sauce
2 bay leaves
3 beef boullion cubes
1 Tbsp Worcestershire® Sauce
16 oz can diced tomatoes with chili peppers
1/4 tsp brown sugar
additional water, if needed

Place all of above in cookwell of a 4 or 6 quart Nesco® Roaster Oven. Simmer at 225º F for an additional 8 hours.

Stir occasionally. Add additional water, if needed, throughout the cooking process to keep level 1" above the beans.

1 stalk celery, chopped
1/2 green pepper, chopped
1 pound German or Polish sausage, cut into small slices
6 cups white rice, cooked

Add celery, green pepper and sausage. Cook an additional 1/2 hour at 350º F.

Serve over rice.

Serves 8

This traditional Louisiana bayou recipe can be served as a main course or as a side dish. Eight hour marinating time required.
