Simmered Pork Chops - 4, 5 or 6Qt. Roaster
4 to 6 (1" thick) center-cut pork chops, browned
1 small lemon
1/2 tsp rosemary
1/2 tsp thyme
1/4 tsp lemon pepper
1 cup cranberry sauce with berries
2 green onions, thinly sliced
1 cup ginger ale
Remove cookwell; cover heatwell. Preheat Nesco® Roaster Oven to 250ºF.
While preheating heatwell:
Arrange browned chops in cookwell. Squeeze lemon over chops; sprinkle on seasonings. Spoon on cranberry sauce and add green onions. Add ginger ale.
Set cookwell in preheated heatwell. Cover and slow-roast 4 to 4½ hours or until chops are tender.
To make gravy:
Remove pan juice with meat baster to a medium saucepan. Add 1/2 cup water, 1 tsp browning sauce, 2 Tbsp grape or currant jelly and 2 Tbsp cornstarch to thicken.
Whisk over medium heat until gravy comes to a boil and thickens. Pour over chops to serve.
