Quick and Easy Pot Roast - 6Qt. Roaster

1 2-3 pound boneless chuck roast
2 cups red wine
2 cups baby carrots, cleaned
3 stalks celery, cut in 1" pieces
1 small red onion, cut in large chunks
2 bags of Simply® potatoes, wedged, already cut and peeled
2 4oz cans sliced mushrooms, drained
Enough water to keep meat and vegetables covered

This recipe can be made quickly and without a lot of trouble.

Preheat 6 Quart Nesco® Roast-Air® Roaster Oven to 400º F. and sear meat on both sides. After browning, add wine and enough water to cover meat and vegetables. Simmer at 350º F for 30 minutes. Check water level every 10 to 15 minutes.

After 30 minutes, add mushrooms, celery and carrots. Cook 15 minutes, then add potatoes. Simmer for 30 minutes more. Check meat doneness with thermometer.
