Fruit Punch - 12 or 18Qt. Roaster

Crust:
2 cups all-purpose flour
3/4 cup butter, melted
2/3 cup powdered sugar

Topping
4 cups fresh fruit (rhubarb, blueberries, cherries, strawberries, well drained canned pineapple or a mixture of any of these)
6 eggs
2 cups granulated sugar
1/2 cup all-purpose flour
1 Tbsp baking powder

Preheat Nesco® Roaster Oven at 350ºF.

Crust:
Melt butter, stir in flour and sugar. Pat into 13 x 9" baking pan. Place on rack in cookwell, cover and bake at 350ºF for 15 minutes.

Topping:
Place fruit on hot crust. Mix together remaining ingredients and pour over fruit. Set on rack in cookwell, cover and bake at 350ºF for 45 minutes or until firm.

Makes 32 - 2" squares
