Italian Minestrone - 12 or 18Qt. Roaster
2 Qts beef broth
7 small red potatoes, peeled, coarsely diced
4 medium carrots, peeled, thinly sliced
1 large onion, chopped
1½ stalks celery, thinly sliced
2 cans (15 oz) stewed tomatoes
8 oz tomato sauce
1/3 cup elbow macaroni, uncooked
10 oz pkg frozen whole kernel corn
10 oz pkg frozen cut green beans
10 oz pkg frozen chopped spinach
15 oz can Great Northern Beans, drained
3 slices bacon, cooked, crumbled
salt and ground black pepper to taste
Preheat Nesco® Roaster Oven to 400º F.
Add 1 qt. broth, potatoes, carrots, onions and celery into preheated cookwell. Cover; cook 15 minutes. Add tomatoes, tomato sauce and macaroni. Cover; cook 20 to 25 minutes or until soup begins to bubble.
Add remaining broth, vegetables, beans, bacon, salt and pepper. Reduce temperature to 325º F. Cover; cook 30 to 40 minutes or until macaroni is tender and soup is heated through.
