Mozzarella Meat Loaf - 4, 5 or 6Qt. Roaster
1/4 cup dry bread crumbs
6 Tbsp ketsup, divided
1/8 tsp garlic powder
1/8 tsp salt
1 lb ground beef
4 thin slices fully-cooked ham, boiled or chopped
1 cup Mozzarella Cheese, shredded, divided
Combine egg, crumbs, 1/4 cup (4 Tbsp) ketsup and seasonings. Stir in ground beef and blend well. Place meat mixture on a sheet of waxed paper. Pat into a rectangle, 8½ x 14". Arrange ham slices evenly over meat. Reserve 2 Tbsp.cheese; sprinkle remaining cheese over ham.
Roll up, jelly-roll style, beginning at narrow end. (Use waxed paper to easily fold and roll meat). Pinch edges and seam to seal.
Cover rack with aluminum foil and place in Nesco® Roaster Oven. Place meat loaf on rack. Cover and cook at 350º F for 1 to 1¼ hours. Top with remaining ketsup and cheese during last 15 minutes.
