Poached Red Snapper Fillets - 4, 5 or 6Qt. Roaster
1 cup ginger ale, hot
1/3 cup lemon juice
1 Tbsp olive oil
1 tsp Italian herb seasoning
4 (6oz each) red snapper fillets, skin-on
Preheat Nesco® Roaster Oven to 250º F.
Place hot ginger ale, lemon juice, oil and seasoning in preheated cookwell. Using a spatula, set fillets with skin-side down in hot liquid. Cover and poach 10 to 14 minutes, depending on thickness of fillets, until fish flakes.
To serve, remove fish from poaching liquid with spatula and lay on plate with skin-side up. Carefully lift off skin. Repeat with remaining fillets.
