Chicken Curry Sandwiches - 4, 5 or 6Qt. Roaster

1 Tbsp butter or margarine
1/2 tsp curry powder, divided
1 Tbsp flour
1/3 cup chicken broth
2 Tbsp milk
1 cup cubed, cooked chicken
3 Tbsp celery, chopped
1 Tbsp green onion, chopped
2 pita or pocket breads

Place rack in Nesco® Roaster Oven. Cover and preheat to 425º F.

Melt butter in skillet. Stir in 1/4 tsp curry powder. Add flour and blend to form a smooth paste. Stir in broth and milk. Cook, stirring, until smooth and thickened. Stir in remaining curry powder, chicken, celery and onions. Stir to blend. Remove from heat.

Cut off tops of pita bread. Fill breads with chicken mixture. Wrap each in aluminum foil. Place on rack in preheated roaster. Cover and bake 10 minutes.
