Mashed Potatoes, Carrots & Parsnips - 4, 5 or 6Qt. Roaster
1 lb potatoes, peeled, cubed
1 lb carrots, peeled, cubed
1 lb parsnips, peeled, cubed
1½ cups milk, divided
1/4 cup butter or margarine
3 oz pkg cream cheese
salt and pepper to taste
Preheat Nesco® Roaster Oven to 325º F.
Place potatoes, carrots, parsnips and 1 cup milk in cookwell. Cover and cook 1½ hours or until vegetables are tender.
Remove cookwell; cover heatwell. Drain vegetables; mash with potato masher. Add 1/2 cup milk, butter cream cheese, salt and pepper; stir until well blended and smooth.
Return cookwell to hot heatwell. To hold up to 1 hour, reduce temperature to 200º F. Keep covered.
Serves 4 to 6
