Lamb Roast and Carrots - 6Qt. Roaster

3 to 4 lb lamb rolled roast, boneless
1 Tbsp grated orange peel
1 Tbsp ginger
1 tsp crushed fennel seeds
3 Tbsp butter or margarine, melted
3 Tbsp honey, melted
12 large whole carrots, peeled

Preheat Nesco® Roaster Oven to 350º F.

Combine orange peel, ginger and fennel seeds in small bowl; stir to blend. Rub half the mixture over lamb. Place lamb on rack in preheated cookwell. Combine remaining mixture with butter and honey. Brush over carrots. Place whole carrots on rack next to lamb.

Cover and roast for 1½ to 2 hours or until internal temperature reaches 165º F on meat thermometer.

Serves 6 to 8
