Poached Chicken & Cabbage - 4, 5 or 6Qt. Roaster

1 medium head cabbage, cored, chopped
2 large baking apples, seeded, coarsely chopped
1½ lbs boneless chicken tenders
1½ cups apple juice, divided
1/4 cup brown sugar, packed
2 Tbsp cider vinegar
1 tsp fennel seeds, crushed
1 tsp poultry seasoning, divided
1 tsp cornstarch
1 tsp chopped chives
1 tsp grated lemon peel

Remove cookwell; cover heatwell. Preheat Nesco® Roaster Oven to 300º F.

Layer cabbage, apples and chicken in cookwell. Combine 1 cup apple juice, brown sugar, vinegar, fennel seeds and 1/2 tsp poultry seasoning in small bowl; whisk to blend; pour over chicken and cabbage.

Set cookwell in preheated heatwell. Cover and poach 35 to 45 minutes or until internal temperature of chicken reaches 270º F on meat thermometer.

At serving time, combine 1/2 cup apple juice, cornstarch, chives and 1/2 tsp poultry seasoning in small saucepan. Bring to a boil over medium-high heat, stirring constantly. Arrange cabbage and chicken on serving platter; pour sauce over top. Sprinkle on lemon peel.
