Baked Fruit in Custard - 12 or 18Qt. Roaster

1½ cups all-purpose flour
2/3 cup margarine, melted
1/2 cup powdered sugar

4 eggs
1 tsp vanilla extract
1½ cups granulated sugar
1/4 cup all-purpose flour
2 tsp baking powder
3 cups fresh Fruit *

* Cut up strawberries, rhubarb, raspberries and/or blueberries.

Preheat Nesco® Roaster Oven to 375º F.

Combine crust ingredients: stir until well mixed. Pat into 9 x 9" baking pan. Place pan on rack. Set rack in preheated cookwell.
Cover; bake 10 minutes.

In large mixing bowl, beat eggs, vanilla and sugar until light and fluffy. Stir in flour and baking powder. Add fruit; stir until well mixed.
Pour over crust.

Cover; bake 45 to 50 minutes or until set.

Serves 8
