Poached Salmon with Light Yogurt-Dill Sauce - 4, 5 or 6Qt. Roaster
1 can (14½ oz) chicken broth
1/2 cup water
1/2 cup dry white wine
2 green onions, sliced
1/4 tsp dill weed
2 salmon steaks (8oz each, cut 3/4" thick)
light yogurt-dill Sauce (see below)
Pour broth, water and wine in Nesco® Roaster Oven. Add onions and dill weed. Cover and cook at 400º F for 15 to 20 minutes or until liquid is hot.
Carefully place fish in hot liquid. Cover and continue to cook at 400º F for 10 to 15 minutes or until fish flakes easily with a fork. Serve warm or chilled with light yogurt-dill sauce.
Light Yogurt-Dill Sauce:
Combine 2 Tbsp finely chopped, seeded cucumber. 3 Tbsp low-fat salad dressing, 2 Tbsp plain yogurt, 1/2 tsp dry parsley flakes and 1/8 tsp dill week. Blend well. Chill.
