Light Supper Pie - 12 or 18Qt. Roaster

Crust:
1 cup all-purpose flour
1/4 cup granulated sugar
1/2 tsp baking powder
1 egg
1 Tbsp water
1 Tbsp margarine

Filling:
2 cups cottage cheese, small curd
1/2 cup granulated sugar
3/4 cup Milk *
4 eggs
1 tsp vanilla extract
6 oz crab meat, flaked
1 Tbsp chives, chopped

* 2%, whole or evaporated

Preheat Nesco® Roaster Oven to 425º F.

Combine flour, sugar and baking powder in 8" round baking dish. Stir in egg, water and margarine until well mixed. Pat evenly in bottom of dish. Place dish on rack. Set rack in preheated cookwell. Cover; bake 10 minutes. Meanwhile, stir together all filling ingredients in large mixing bowl; stir until well mixed.

Pour filling over crust. Cover; bake 10 minutes. Reduce temperature to 250º F; bake 40 to 45 minutes or until set. Remove from roaster oven and allow to set 5 to 10 minutes before serving to allow pie to set.

Note: Serve with a mushroom or light herb sauce. This pie is good served warm or cold.
