Poached Pears or Apples - 4, 5 or 6Qt. Roaster
6 large ripe pears or baking apples, peeled
1 qt cranberry juice
1 large lemon, sliced
2 whole cinnamon sticks
1 tsp pumpkin pie spice
1 Tbsp cornstarch
Preheat Nesco® Roaster Oven to 225º F.
Place whole fruits in preheated cookwell; pour juice over fruit. Add lemon, cinnamon and spice. Cover and poach 35 to 45 minutes, depending on type and firmness of fruit, or until fruit is tender.
Remove from poaching liquid with slotted spoon. Serve warm or place in air-tight container and refrigerate until chilled.
To serve, combine 1 cup cooled poaching liquid and cornstarch in small saucepan. Cook over medium heat until thickened.
