Herbed Lamb Roasts - 12 or 18Qt. Roaster
2 (4 lbs each) lamb shoulder roasts, boneless
1 cup beef broth
1 cup red currant or grape jelly
3 Tbsp all-purpose flour
1/2 tsp lemon pepper
Preheat Nesco® Roaster Oven to 375ºF.
Place roasts on rack in preheated cookwell. Cover and roast 30 to 35 minutes per lb. or until internal temperature reaches 165ºF on meat thermometer.
Combine remaining ingredients in medium saucepan; whisk until smooth. Cook over medium heat until thickened. whisking constantly.
Before serving, spoon hot gravy mixture over roasts.
Serve 10 to 12
