Parmesan Lamb Chops - 18Qt. Roaster

12 (3 to 4oz each) lamb rib chops
2 large eggs
1/4 cup milk
1½ cups seasoned bread crumbs
1/2 cup freshly grated Parmesan Cheese
1 Tbsp grated lemon peel
2 tsp Italian herb seasoning
1/4 tsp ground black pepper

Preheat Nesco®, Roaster Oven to 400º F.

Combine eggs and milk in small bowl; whisk to blend.
Dip both sides of chops in egg mixture; discard any leftover mixture.

Combine remaining ingredients in shallow dish; coat both sides of chops. Arrange chops on rack. Place rack in preheated cookwell. Cover and broil 8 to12 minutes, depending on tickness of chops, or until internal temperature reached 165º F on meat thermometer.

Serves 6 to 8
