Fire Pot Pork - 6, 12 or 18Qt. Roaster

2 lbs boneless pork chops, cut into 1/4" strips
6 cups Chicken stock
1 small Chinese cabbage, quartered & thinly sliced
2 green onions, thinly sliced
2 carrots, thinly sliced
1 Tbsp fresh ginger, minced
4 cloves garlic, minced
1 Tbsp parsley
1 cinnamon stick
4 star anise
1/4 tsp red pepper, crushed
2 Tbsp soy sauce
salt & pepper to taste
1 pkg bean thread noodles

Preheat Nesco Roaster Oven to 425ºF. Lightly wipe cookwell with cooking oil. Add all ingredients except Bean Thread Noodles. Cover and reduce temperature to 300 ºF.

Roast for 1½ hours. Soak noodles in water until softened. Drain and place in serving bowls. Ladle pork mixture over noodles and serve.
