German Potato Salad - 12 or 18Qt. Roaster

3½ to 4 lb red potatoes
3 green onions, sliced
1/2 lb bacon, cooked, crumbled
1/2 cup granulated sugar
1/2 cup cider vinegar
1 cup hot Water
1 tsp tarragon, chopped
2 Tbsp parsley, chopped
salt and ground black pepper to taste

Place rack in Nesco® Roaster Oven; add 4 cups hot water. Cover; preheat to 400ºF for 20 minutes.

Set potatoes on rack. Cover; steam 20 to 25 minutes or until tender. Remove potatoes and rack. Peel and slice potatoes. Drain water from cookwell. Reduce temperature to 250ºF.

Place cookwell into heatwell; lightly wipe with cooking oil. Add potatoes. Combine remaining ingredients; stir. Pour over potatoes and gently toss to coat. Cover; cook 45 to 60 minutes or until heated through and flavors blend.

Serves 10 to 12
