Harley Dip - 4, 5 or 6Qt. Roaster

Chili Con Queso, Mexican Cheese Dip

In a NESCO® Roaster Oven, combine:

1 lb pork sausage or ground turkey
1 large onion, chopped
1 lb fresh mushrooms, cleaned and chopped
1 jalapeño pepper, finely chopped (optional)

1 can chopped tomatoes and chili peppers
1/2 jar salsa, thick and chunky
10 oz can Cream of Mushroom Soup
2 pounds Velveeta® cheese, cut into 1" cubes

Brown meat, onion, mushrooms and pepper. Drain off any excess grease. Add remaining ingredients. Reduce heat to 200º F. Cover. Stir occasionally until cheese melts.

**Do not let cheese burn on sides of cookwell. If it starts to stick, reduce heat and scrape edges of cookwell with a nylon or wooden spoon.

Serve with tortilla chips or fresh vegetables.
