Vegetable Pasta - 6 or 12Qt. Roaster
8oz. linguine or fettucine
2 cups broccoli flowerets
1 green onions, chopped
1 carrot, cut in thin, julienne strips
1 small yellow summer squash, sliced 1/2" thick
1/2 tsp garlic powder
1/2 tsp basil
1/2 cup chicken broth
1 cup fresh mushrooms, sliced
4oz fresh Parmesan Cheese, grated
Cook linguine in boiling water, according to package directions. Drain.
Place broccoli, onion, carrot, squash, seasonings and broth in Nesco® Roaster Oven. Cover and cook at 350º F for 20 minutes, stirring frequently.
Add mushrooms and continue cooking 5 to 10 minutes or until vegetables are crisp-tender and nearly all broth has been absorbed.
Stir in cooked linguine and Parmesan cheese. Cover and heat 1 to 2 minutes.
