Beef Stew - 6Qt. Roaster

4 large carrots cut into large chunks
1 cup celery, coarsely chopped
1 large onion, quartered
1 green pepper, coarsely chopped
3 cups potato chunks
1½ tsp salt
1 Tbsp Worcestershire® Sauce
3 cups hot water
2 beef bullion cubes
2 lbs beef stew meat, cut into 1" pieces
1/3 cup tapioca
1/4 cup sherry

Remove cookwell from Nesco® 6 Qt. Roaster Oven and wipe interior with cooking oil. Preheat roaster to 400º F.

Place all ingredients in cookwell and stir to mix. Put cookwell in roaster and cover. As soon as bubbles appear around sides, reduce heat to 200º F and slow cook for approximately 8 to 10 hours. Stir occasionally.

Serve 6
