White Cake - 18QT Roaster Oven and Cake Pan

2 1/4 cups cake flour
1 teaspoon vanilla extract
1 cup room temperature milk
1 3/4 cups white sugar
6 large room temperature eggs
4 Tablespoons baking powder
1 teaspoons almond extract
1 teaspoon salt
3/4 cup soft, but still cool butter, cut in cubes

Pre-Heat Nesco® Roaster Oven to 350 degrees. Prepare Nesco® 9x13 Cake Pan with cooking spray and flour.

Combine milk, egg whites and extracts into medium bowl and mix with fork until blended.
Mix cake flour, sugar, baking powder, and salt in a bowl with a Nesco® Electric Mixer at slow speed. Add butter and continue beating on low for about 1-2 minutes.

Add all but 1/2 cup milk mixture and beat at medium speed for 1 1/2 minutes. Add remaining 1/2 cup milk mixture and beat for about 1 minute.

Pour batter in Nesco® 9x13 Cake Pan. Bake 35-40 minutes or until toothpick inserted in center comes out clean.

Allow cake to cool to room temperature.

Frost with your favorite frostings and decorate with your favorite toppings.
