Cherry-Glazed Pork Roast - 12 or 18Qt. Roaster

5 - 6 lb boneless double pork loin roast, rolled and tied
21 oz can cherry pie filling
1/4 to 1/2 cup golden raisins
2 Tbsp lemon Juice
1/2 tsp cinnamon

Preheat Nesco® Roaster Oven to 325º F.

Place roast on rack in cookwell. Roast approximately 1 to 1½ hours or until meat thermometer registers 155º F.

Combine pie filling, raisins, lemon juice and cinnamon in medium bowl; mix well. Spoon cherry glaze over the pork several times during last 20 minutes of roasting. Reserve some glaze for serving.

Remove roast to cutting board and let stand 10 minutes before slicing.
Heat remaining glaze and serve with carved roast.
