Steamed Cherry Pudding - 4, 5 or 6Qt. Roaster

1/2 cup dark corn syrup
1/2 cup coffee or juice from cherries
2 Tbsp butter or margarine, melted
1 tsp Vanilla Extract
1½ cups all-purpose flour
2 tsp baking soda
1 16oz can dark sweet cherries, drained
1 large ripe pear, peeled, seeded, chopped
1/2 cup chopped pecans

Preheat Nesco® Roaster Oven to 400ºF.

Combine syrup, coffee, margarine and vanilla in large mixing bowl. Add
dry ingredients. Stir just until moistened. Carefully stir in cherries, pear
and pecans. Pour into greased 1-qt. mold or oven-safe bowl.

Steamed Cherry Pudding - 4, 5 or 6Qt. Roaster

Cover mold with a piece of wax paper, set on rack in cookwell. Add hot
water to come up 1" on sides of mold, cover and steam 55 to 65 minutes or until
wooden pick inserted in center comes out clean.

To maintain water level, add hot water to cookwell if needed. Cool on
cooling rack 5 minutes before unmolding.

Serve with a brandy, caramel or butter sauce.
