Mexican Quiche - Jet Stream Oven

1½ cups hot cooked rice
1 Tbsp fresh chives, snipped
1 egg white

1 pound lean ground beef
1/3 cup onion, chopped
1/4 cup green pepper, chopped
1 tsp chili powder
1/4 tsp black pepper
3/4 cup egg substitute
1/2 cup evaporated skimmed milk
1/2 cup low-fat cheddar cheese, shredded

Step 1:

Mash rice, chives and egg white with fork. Wipe 9" pie pan with cooking
oil. Place mixture in pan and spread evenly with rubber spatula over bottom and
up sides, leaving no holes. Place on rack in Nesco«/American Harvest« Jet
Stream Oven«
and bake at 325║ F for 5 minutes with fan on high.

Step 2:
Saute ground beef, onion, green pepper, chili powder and pepper in
skillet. Drain. Spoon meat into rice shell. Combine egg substitute and milk and
pour over meat. Sprinkle with cheese. Bake at 325║ F with fan on low for 14 to
16 minutes until knife inserted near center comes out clean. Let stand 15
minutes before cutting into wedges.
