1 2-3 pound boneless chuck roast
2 cups red wine
2 cups baby carrots, cleaned
3 stalks celery, cut in 1" pieces
1 small red onion, cut in large chunks
2 bags of Simply® potatoes, wedged, already cut and peeled
2 4oz cans sliced mushrooms, drained
Enough water to keep meat and vegetables covered

This recipe can be made quickly and without a lot of trouble.

Preheat 6 Quart Nesco® Roast-Air® Roaster Oven to 400º F. and sear
meat on both sides. After browning, add wine and enough water to cover meat and
vegetables. Simmer at 350º F for 30 minutes. Check water level every 10 to 15

After 30 minutes, add mushrooms, celery and carrots. Cook 15 minutes,
