|Leg of Lamb - 6, 12 or 18Qt. Roaster
1 (3 to 4 lb) leg of lamb
1 small red pepper, seeded, finely chopped
1 small yellow pepper, seeded, finely chopped
2 Tbsp margarine, melted
1 tsp rosemary
1/2 tsp basil
1/2 tsp tarragon
Preheat Nesco® Roaster Oven to 400º F.
Place meat on lower rack. combine remaining ingredients; stir until well
mixed. Spread evenly over meat.
Lightly wipe cookwell with cooking oil. Set rack in preheated cookwell.
Cover; roast 10 minutes.
Reduce temperature to 325º F. Roast 1½ to 2 hours (175º
