Italian Stew - 4, 5 or 6Qt. Roaster

1 pound stew meat, cubed
8 oz mushrooms, cleaned and sliced
1 onion, sliced
8 potatoes, peeled and cubed
1 Tbsp basil, dried
1 Tbsp oregano, dried
4 oz can tomato sauce
Parmesan or Romano Cheese, grated

Preheat Nesco® 4, 5 or 6 Quart Roaster Oven to 350º F. Place meat
and onion in cookwell. Stir and cook until browned. Add mushrooms. Salt and
pepper to taste. Add potatoes. Cook until fork-tender. Add tomato sauce, basil
and oregano.

Simmer and cook 20 minutes If stew becomes dry, add water. You can add
another can of sauce in place of water, but cook a bit longer so sauce can
penetrate the meat and potatoes.

Sprinkle with cheese and serve with hot, crusty Italian bread and a salad.
