|Roast Lamb Shanks - 18Qt. Roaster
6 (10oz each) lamb shanks
6 Tbsp light olive oil
1 large lemon, squeezed
2 tsp rosemary
2 tsp lemon pepper
1 qt beef broth
1/4 cup all-purpose flour
1 large onion, chopped
Preheat Nesco® Roaster Oven to 400ºF.
Combine oil, lemon juice and seasonings in small bowl; whisk until
blended. Brush over meat and place on rack. Set rack in preheated cookwell.
Cover and roast 20 to 25 minutes or until browned.
Lift out rack; set shanks directly in cookwell. Combine broth and flour

in small bowl; whisk to blend. Stir in onion. Pour over meat. Reduce
temperature to 300ºF. Cover; 2 to 2½ hours or until internal temperature
reach 165ºF on meat thermometer without touching bone. Stir sauce once,
halfway through roasting time.
