|Pork Chops with Spinach Vegetable Stuffing - 4, 5, or 6Qt. Roaster
|4 pork chops, 1" thick, cut with pocket
2 Tbsp olive oil
1/4 cup onion, chopped
2 garlic cloves, minced
1/4 cup red bell pepper, chopped
1/4 cup yellow bell pepper, chopped
2 cups fresh baby spinach
26oz can/jar spaghetti sauce
1 Tbs honey
salt and pepper to taste
Preheat Nesco® Roaster Oven to 435º F.
Lightly wipe cookwell with cooking oil. Add olive oil, bell peppers, onion, garlic and spinach. Cover and reduce temperature to 350º F.
Cook vegetables 5 minutes. Fill pocket of chops with vegetable stuffing. Pour half of spaghetti sauce and honey into cookwell and mix. Place chops on top of sauce and pour remaining sauce on top. Cover and reduce to 300º F and roast 1½ hours. Serve with pasta.
