|Minestrone Soup - Pressure Cooker
|2 large carrots
2 large potatoes, chunked
3 celery sticks, chopped or diced
4 garlic cloves, chopped
½ tsp dried sage
½ tsp dried oregano
32 oz chicken or vegetable stock
14 oz can of navy beans
pinch of fresh basil, chopped
3 Tbsp extra virgin olive oil
freshly grated Parmesan Cheese – to serve
salt & pepper to taste
Put carrots, potatoes, celery, garlic, sage, oregano, & stock in Nesco® 6 Qt. 3-in-1 Digital Electric Pressure Cooker.
Season with salt & paper to taste.
Cook on HIGH pressure for 3 minutes. Turn off heat & vent by quick release. Add beans & cook on HIGH pressure for one minute more. Stir in the basil, oil, & Parmesan Cheese when ready to serve.
