|Shrimp Cheese Puff - 4, 5 or 6Qt. Roaster
1/2 lb french bread
1/2 cup margarine, divided
1/2 lb small shrimp, cleaned
1/4 cup all-purpose flour
1 cup milk
16oz can stewed tomatoes
salt and pepper to taste
3 eggs, lightly beaten
1½ cups (6oz) grated Swiss cheese
1 cup (4oz) Gruyere Cheese, cut into pieces
Cut bread into 1" slices. Spread half margarine on one side of each
slice. Lightly wipe cookwell with cooking oil. Layer half the shrimp and
cheeses over bread.
Melt margarine in medium saucepan over medium heat. Stir in flour.

Gradually stir in milk. Cook until thickened, stirring constantly. Remove from
heat, stir in stewed tomatoes. Stir in small amount of tomato sauce into eggs.
Stir egg mixture back into tomato mixture.
Pour half the tomato mixture over first layer. Repeat layers. Cover
cookwell and refrigerate overnight.
Preheat Nesco® Roaster Oven to 300ºF.
Place cookwell in heatwell. Cover, bake 65 to 75 minutes or until set.
Serve with Mushroom Sauce.
