3 Tbsp Olive oil, plus additional for drizzling
1½ cups (12oz) warm water
1 Tbsp instant yeast or 4 tsp (2 packets) active dry yeast
1¼ tsp salt
3¼ cups unbleached flour
Italian seasoning or dried herbs of your choice for topping.

Lightly grease loaf pan or 9 x 13" pan. Drizzle 1 Tbsp olive oil in
bottom and spread with paper toweling.

Combine water with yeast in bowl of electric mixer. Add remaining oil,
salt and flour and beat on high speed for 1 minute. Scoop sticky batter into
prepared pan, cover, and let it rise at room temperature until it becomes puffy -
60 minutes for instant yeast or 90 minutes for active dry yeast.

lightly with olive oil and sprinkle with Italian seasoning. Place pan on rack in
oven and bake until golden brown, 35 to 40 minutes. Remove from oven, let
stand 5 minutes, then remove from pan onto a rack. Serve warm or at room
temperature.
