|Sweet & Sour Chicken - Pressure Cooker
1 Tbsp vegetable oil
1½ cups onion, chopped
1½ cups green bell pepper, cored, seeded, diced
1½ cups red bell pepper, cored, seeded, diced
2½ lbs. boneless chicken thighs, trimmed of fat, cut into pieces
3 tbsp soy sauce
1½ cups prepared sweet-n-sour or duck sauce
1 Tbsp apple-cider vinegar
3 Tbsp water
1 tsp garlic powder
2 scallions, white and green parts, thinly sliced
1 Tbsp fresh ginger, finely minced
2 cups cooked white rice
Heat oil in Nesco® 6 Qt. 3-in-1 Digital Pressure Cooker. using
the BROWN setting: Add onions, red and green bell peppers, brown for 2

minutes. Add chicken and soy sauce cooking for an additional 3 minutes. Add
sweet-n-sour sauce, apple-cider vinegar, water, and garlic powder. Stir well.
Cover and set to HIGH pressure for 10 minutes. Use the quick-release
method to release pressure.
Garnish with scallions. Serve over rice.
