|Greek-style Loin Roast - Jet Stream Oven
|1 3 lb pork loin roast, boneless
1/4 cup olive oil
1/4 cup lemon juice
6 cloves garlic, minced
1 tsp oregano
1 tsp black pepper
1/2 tsp salt
Place pork loin in large zip lock bag. Combine remaining ingredients, pour over roast. Seal bag and refrigerate over night.
Assemble Nesco®/American Harvest® Jet Stream Oven® with one expander ring. Remove pork from marinade; discard marinade. Place roast on rack and cook at 300ºF on LOW fan speed for 1¼ to 1½ hrs. or until meat thermometer registers 155-160ºF.
Cover with foil and led stand 10-15 minutes before slicing.
Slice thinly and serve with Spicy Yogurt Sauce listed below.
Spicy Yogurt Sauce
1 cup plain no-fat yogurt
1 cucumber, peeled and chopped
1/4 cup red onion, minced
1/2 tsp garlic, minced
1/2 tsp coriander seed, crushed
1/4 tsp red pepper, crushed
In small bowl, stir together all ingredients. Cover and refrigerate until ready to serve.
