|Healthy Split Pea Soup - 6Qt. Roaster
|This makes a satisfying vegetarian meal and tastes great on a cold, winter day!
16 oz bag dried green split peas
1 medium onion, chopped
1 tsp garlic powder
3 Tbsp canola or olive oil
1 cup white rice, uncooked
1/4 cup margarine, reduced fat
salt and pepper
Preheat 6 Quart Nesco® Roaster Oven to 350º F. Saute onion and garlic until transparent. Add peas and enough water to fill to about half capacity. Cover. Cook 2 hours or until peas are tender.
Add more water to keep cookwell about half full. Stir in rice and cover. Cook another 30 minutes.
Before serving, add margarine and stir until melted. Salt and pepper may be added to taste.
