|Bouillabaisse - 4, 5 or 6Qt. Roaster
|1 medium onion, chopped
2 garlic cloves, minced
2 Tbsp olive or cooking oil
1/4 cup parsley, chopped
2½ tsp salt
1/4 tsp curry powder
1/2 tsp pepper
1 bay leaf
4 cups water
1 tsp lemon juice
1 lb fish fillets, cut into 2" pieces
12 oz shrimp, frozen
6 oz crab meat (or lobster meat), frozen
1 pt oyster or clams, drained
8 oz can tomato sauce
Preheat Nesco® Roaster Oven to 350º F.
In cookwell, saute onion and garlic in oil until tender. Add remaining ingredients and stir to distribute evenly. Heat to boiling.
Reduce heat to 250º F and simmer, covered, 20 to 30 minutes or until seafood is done, stirring occasionally.
Remove bay leaf before serving.
